Oat And Honey Bran Muffins

Ingredients

1 cup (250ml) rolled oats
¾ cup (175 ml) wheat germ
½ cup (125 ml) natural bran
½ tsp (2 ml) salt
½ tsp (2 ml) cinnamon
1 cup (250 ml) buttermilk/sour milk
¾ cup (200 ml) honey
2 eggs, beaten
½ cup (125 ml) oil
1 cup (250 ml) whole wheat flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) baking soda
½ cup (125 ml) raisins

Directions

Combine oats, wheat germ, bran, salt, cinnamon and buttermilk; mix well and let stand 15 minutes. Add honey, eggs and oil; mix well. Combine flour, baking powder and baking soda; add to egg mixture, stirring until just moistened. Stir in raisins. Fill well-greased muffin cups ¾ full. Bake in 375F oven for 20-25 minutes.
