Ingredients1 ¼ cups AP flour
¾ cups natural bran
1 tsp baking powder
1 tsp baking soda
pinch salt
½ cup butter, softened
½ cup brown sugar
1 egg
2/3 cup mashed banana (2-3)
½ cup buttermilk/sour milk
1 Tbsp molasses
¾ cup raisins
Combine flour, bran, baking powder, baking soda & salt; stir well to blend. Cream butter, brown sugar and egg thoroughly. Stir in mashed bananas, buttermilk and molasses. All liquid ingredients all at once to dry ingredients. Stir until just moistened. Stir in raisins. Fill well-greased muffin cups ¾ full. Bake in 375F oven for 20-25 minutes.
