Ingredients2 small zucchini, shredded
I small onion, shredded/chopped
½ green pepper, chopped
3 eggs, beaten
½ c Parmesan cheese, grated
½ c Cheddar cheese, grated
1 cup AP/WW flour
¼ tsp garlic pwdr
¼ tsp garlic salt
¼ tsp pepper
Combine zucchini, onion, green pepper and eggs in a large bowl. Add remaining ingredients, stirring until combined.
Melt butter in a large saucepan over medium heat. Drop heaping tablespoons of mixture. Cook on one side until browned, turn and flatten the other side.
