1 small Bag of Baby spinach
1 Can of mandarin slices
sliced red onion- to taste
1 avocado- sliced
1/2 cup almonds or walnuts
1/2 cup raisins
Dressing
1 tablespoon mango chutney
1/2 teaspoon curry
1/2 teaspoon olive oil
fresh juice of lime or lemon
Brown almonds and raisins together in a little oil - set aside to cool. Mix spinach, drained can of mandarin slices, red onions, sliced avocado and cooled mixture of almond and raisins. Add salad dressing and toss thoroughly
