1 16 oz. can of black beans, rinsed and drained
1 cup frozen corn, thawed
12 cherry or grape tomatoes, halved
½ cup scallions
2 cloves garlic, pressed
½ cup diced red bell pepper
¼ cup chopped cilantro
2 Tbs extra virgin olive oil
3 Tbs freshly squeezed lime juice
¼ tsp ground cumin
Mix all ingredients in a large bowl, cover, and let marinate in the refrigerator for a few hours before serving. Can be a main dish or a side dish.
