Servings 2-9" layer cakes
Ingredients3 eggs
¾ cup buttermilk
¾ oil
1-½ cups sugar
2 tsp vanilla
1-½ tsp cinnamon
¼ tsp nutmeg
¼ tsp cloves
¼ tsp salt
2 cups AP flour
2 tsp baking soda
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts
8 oz crushed pineapple with juice
1 cup raisins
Combine eggs, buttermilk, oil, sugar and vanilla, mixing well. In a separate bowl, blend flour, baking soda, salt and spices. Add to wet ingredients, and mix well. In a medium bowl, combine carrots, coconut, walnuts, pineapple and raisins. Add to batter, folding in well. Pour into 2 greased and floured cake pans. Bake in preheated 350F oven for 30-40 minutes until done.
