Lychee Upside Down Cake

Ingredients

¼ cup butter
1 egg
½ tsp. cinnamon
1 cup brown sugar
1 tsp. vanilla
½ tsp. ground ginger
1 can (19 oz.) lychee, drained
1 ½ cup flour
pinch ground cloves
½ cup butter, softened
½ cup sugar
pinch nutmeg
½ cup milk
2 tsp. baking powder.
pinch salt

Directions

In 8” square cake pan, melt ¼ cup butter in 400?F oven. Stir in brown sugar & cook 5 min. longer or until sugar melts.
Cut lichees in half, arrange flat side up in melted sugar mixture.
In large bowl, beat butter, milk, egg, vanilla. In a separate bowl, sift dry; stir into creamed mixture until just blended. Spoon batter over lichee. Bake in 400?F oven for 35 minutes or until done. Let stand 5 minutes, then invert onto serving dish.
