Maid Marian’s Blueberry Oatmeal Muffins

Ingredients

1 cup (250ml) rolled oats
1 cup (250ml) buttermilk/soured milk
1 cup
¾ cup (150ml) brwn sugar
1 tsp (5ml) baking powder
¼ tsp (1 ml).salt
(250ml) flour
¼ cup (50ml) melted butter/margarine
1 egg, beaten
1 cup (250ml) blueberries
½ tsp (2ml baking) soda

Directions

Combine oats & buttermilk in small bowl; let stand. Combine flour, baking powder, baking soda, salt, and brown sugar; stir well to blend. Use some to flour blueberries. Add egg & melted margarine to oat mixture, mixing well. Add oat mixture all at once to dry ingredients. Stir until all moistened. Fold in blueberries. Fill well greased muffin tins ¾ full. Bake in 400F (200C) oven for 15-22 minutes.
