Servings a bit more than 6 adults
Ingredients1 lbs meat, chopped
1 large onion, chopped
Handful of mushrooms, sliced
3 or 4 carrots, chopped
1 large potato, chopped
1 or 2 other greens - zucchini, broccoli, etc.
1 lbs tofu, chopped
3.5 cups water (less than 4)
1 package Japanese curry (4 squares, ~100g)
Ahead of time, chop everything.
1. Add oil. Brown the meat as needed ~2-3 minutes
2. Saute onions and mushrooms a bit
3. Add carrots, potatoes, and water. Bring to a boil, then simmer for 10 minutes lid on. Check as needed
4. Add the sauce and simmer for 5 minutes lid off
5. Add the tofu
Serve with 3 scoops of rice
