PINEAPPLE CARROT CAKE

Servings 9 inch glass pie plate

Ingredients

1 ¼ cup flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¾ tsp cinnamon
¼ tsp ground cloves
¼ tsp ground ginger
¼ tsp ground nutmeg
½ cup canola oil
½ cup + 2 Tbsp brown sugar
2 Tbsp sugar
2 eggs
½ tsp vanilla
1 cup grated carrots (1 ½ large carrots)
½ cup crushed pineapple drained

Directions

Preheat oven to 350F. Grease glass pie plate
Whisk dry ingredients
Whisk wet ingredients.
Pour wet ingredients into dry ingredients and whisk until combined. Fold in grated carrots and pineapple.
Bake 45 mnutes until done
